Chunky Pecan Pie Bars
from Miss Spenser's Teatime Recipes Vol. 1
Crust:
1 1/2 C Flour
1/2 C Butter, softened
1/4 C Brown Sugar
Beat flour, butter and brown sugar in small bowl until crumbly. Press in greased and floured 9x13 pan. Bake 12-15 minutes or until lightly browned.
Filling:
3 Large Eggs
3/4 C Corn Syrup
3/4 Sugar
2 TBSP Butter, melted
1 tsp Vanilla
1 3/4 C semi sweet Chocolate Chunks
1 1/2 C Pecans
Beat Eggs, Syrup, Sugar, Butter and Vanilla. Stir in chunks and nuts. Pour evenly over crust. Bake 25-30 minutes or until set.
